The Challenge: Portable Bakery Trolley

The M&S design team approached our designers to develop a turn- key design concept for a dual aspect window instore bakery piece of furniture. Aesthetic direction was to be in keeping with existing M&S bakery furniture whilst invoking feelings of traditional artisan bakeries, ensuring operationally, the concept could be delivered to increase productivity.

Design Considerations:

Evaluate the customer journey starting with an enticing window display from the exterior of the store, with a welcoming and easily shoppable unit from the interior. The design needed to consider the store operations particularly the replenishment of product to minimize store colleagues intruding into key area of the store front. Mobility of the units to allow for ease, of removing for replenishment to the BOH/bakery area was paramount. Materials chosen were contemporary to inspire the look and feel of an artisan bakery.

Our Approach and Process:

We started by understanding the back of house operation, and how the bakery trollies would be utilised in store. This ensured we could deliver a fit for purpose piece of equipment that would enhance the bakery operations and streamline replenishment. Once the operation elements were evaluated, we started to map out the customer journey, considering key sight lines, presentation, POS communication and ease of purchase.
